Candied Sweet Potatoes

Ingredients:
1 big sweet potato (~1 lb)
oil for frying
1 tbsp vegetable oil
1/4 sugar
Directions:
- Peel sweet potato and cut into chunks
- Fry until soft
- Heat sugar and oil in pan over medium heat until sugar begins to melt
- Lower heat and simmer until melted, ~7-8 minutes (don't stir)
- Coat sweet potato in sugar and transfer onto parchment paper
